I have been doing so good with my new healthy eating lifestyle. I’ve lost 10 pounds in the last few weeks and I’m feeling good! For lunch today I made a homemade chopped garden salad to which I added 2 ounces of broiled/seasoned chicken breast. The easiest way to maintain healthy eating is to prepare certain things in advance – like broiled/seasoned chicken breast. Throw a few chicken breasts on a broiler pan with some seasoning on them and broil about 8 minutes on each side and you should be set for the week! Anytime you want to add chicken to something, it’s ready for you. Along with my salad I made a Whey Protein Shake: 1 scoop of rich chocolate whey protein powder in a blender with about 6 ounces of water, blend. Add a handful of ice, blend. Add 2 tablespoons of creamy peanut butter, blend. Voilà! You have a delicious, healthy, protein packed shake to enjoy.

Another wonderful healthy meal is a veggie packed frittata. You can prepare it with egg whites only if you’re at the beginning of your journey to becoming healthy or make with mostly egg whites and one or two whole eggs. The choice is yours. It’s a very simple thing to prepare and it makes enough for the whole family or you can package the left overs and heat up during the week.

Start out by putting your chopped vegetables in a saute pan – I used fresh mushrooms, onions and peppers in mine, but you can use anything you would put in an omelet. Saute the vegetables over med-high heat until fragrant and soft, season with a pinch of salt and pepper (add any herbs or spices you may enjoy). Whisk approximately eight egg whites and one or two whole eggs in a bowl and pour over vegetables. Continue to cook on stove top until the bottom off the fritatta is set, then move the pan to a preheated oven (400 degrees) until the eggs are completely set – about 12 minutes. Note: The more eggs you use, the thicker/fluffier your fritatta will be. You can also add low-fat cheese to the top a couple minutes before it’s done cooking, if you like.
